Romesco sauce is a herb and veg mixture which is a healthy and delicious alternative to butter on sandwiches.

Ingredients

Red capsicum

1 medium, , quartered

Pecans

4 piece(s), halves, toasted

Fresh flat-leaf parsley

1 tbs, leaves

Olive oil

1 tbs

Red wine vinegar

1 tsp

High fibre wholemeal bread

8 slice(s)

Baby spinach

40 g

Light Swiss cheese

2 slice(s), (4 slices)

Deli-sliced roast beef

120 g, (8 slices)

Pickled gherkin, drained

4 individual, thinly sliced

Instructions

  1. Preheat grill on high. Line a baking tray with foil. Place capsicum skin-side up on prepared tray. Grill capsicum until skin blackens and blisters. Place capsicum in a snap-lock bag. Stand for 5 minutes. Peel away skin and discard.
  2. Using a food processor, make the romesco sauce by processing capsicum, pecan, parsley, olive oil and red wine vinegar until finely chopped and combined.
  3. Top 4 bread slices with spinach, cheese, beef, gherkins and romesco. Top with remaining bread.

Notes

TIP: Toast pecans in a dry frying pan on medium heat until fragrant and golden.
