Quick pork and ramen stir-fry
Ramen noodles, fresh
lean pork fillet
320 g, (Buy 400g) fat trimmed, thinly sliced
1 medium, cut into wedges
300 g, cut into florets
1 medium, thinly sliced
200 g, halved
2 individual, sliced diagonally
2 x 3 second spray(s)
- Place noodles in a large heatproof bowl and cover with boiling water. Stand for 5-10 minutes to soften. Drain.
- Meanwhile, lightly spray a large non-stick frying pan or wok with oil and heat over medium-high heat. Stir-fry pork in batches, for 1-2 minutes each side or until just cooked through. Transfer to a plate and set aside.
- Lightly spray pan with oil and stir-fry onion for 1-2 minutes. Add broccoli, capsicum and beans and stir-fry for 1-2 minutes. Add a splash of water to create steam. Return pork to pan with oyster sauce, honey and juice. Toss to coat. Add drained noodles and toss to combine. Sprinkle with sliced green onion to serve.
