Prawn, papaya and soba noodle salad

Papaya, prawn, mint, onion and coriander give this salad an incredible range of flavours and textures

Ingredients

Paw paw or papaya

400 g, cut into 2 cm pieces

Red onion

40 g, sliced

Fresh coriander

2 tbs, chopped

Fresh mint

2 tbs, shredded

Dry soba noodles (100% buckwheat)

180 g

Sunflower oil

2 tsp

Raw peeled prawns

600 g, peeled, tails intact

Garlic

2 clove(s), crushed

Fresh red chilli

1 tsp, finely chopped, seeded

Lime juice

cup(s), (80ml)

Instructions

  1. Combine the papaya, onion, coriander and mint in a medium bowl.
  2. Cook the noodles following packet directions until just tender. Drain.
  3. Meanwhile, combine the oil, prawns, garlic, ginger and chilli in a bowl. Heat a wok over high heat. Stir-fry the prawn mixture, in 2 batches, for 2-3 minutes or until cooked. Return prawn mixture to the wok with half the lime juice and stir-fry for 1 minute or until heated through.
  4. Combine the prawn mixture, noodles, papaya mixture and remaining lime juice in a bowl to serve.

Notes

SERVING SUGGESTION: Salad made from 4 cups shredded cabbage, 2 sliced celery sticks and 3 sliced green shallots. Pour over 2 tablespoons of apple cider vinegar and toss to combine.
