Refreshing iceberg lettuce topped with king prawns.You can’t go wrong with this retro starter

Ingredients

light whole egg mayonnaise

2 tbs

tomato sauce

2 tbs

lemon juice

1 tbs

caster sugar

½ tsp

tabasco sauce

¼ tsp

avocado

2 small, halved, stone removed, thinly sliced

fresh dill

1 tbs, finely chopped

iceberg lettuce

1 individual, (small)

cooked king prawns

800 g, (1.6kg purchased) peeled, tails intact

Instructions

  1. To make cocktail sauce, combine mayonnaise, tomato sauce, half the lemon juice, caster sugar and Tabasco sauce in a small bowl.
  2. Place avocado, remaining lemon juice and dill in a medium bowl, tossing to combine. Arrange lettuce on a serving platter, top with avocado mixture and prawns, then season with salt and freshly ground black pepper. Serve prawn cocktail salad with cocktail sauce.
