Ingredients

Brown onion

1 medium, finely chopped

Red capsicum

1 medium, chopped

Garlic

3 clove(s), thinly sliced

Rice, white, dry

1 cup(s), medium grain (200g)

Canned diced tomatoes

400 g, (1x400g can)

Green string beans

300 g, cut into 3cm lengths

Seafood marinara mix

600 g

Fresh coriander

½ cup(s), coarsely chopped

Oil spray

2 x 3 second spray(s)

Instructions

  1. Lightly spray a large saucepan with oil and heat over medium-high heat. Cook onion, capsicum and garlic, stirring occasionally, for 5 minutes or until just tender. Add rice and stir to coat.
  2. Add tomatoes and 2 cups (500ml) water and bring to the boil. Reduce heat and simmer, covered, for 5 minutes. Add beans and cook, covered, for 8 minutes.
  3. Add marinara mix and cook, covered, for 5 minutes or until rice is tender and marinara mix is just cooked. Sprinkle with coriander to serve.

Notes

Add it: 1 long fresh red chilli (thinly sliced) to serve. Swap it: White rice for brown rice (increase cooking time in Step 2).
