Up your veg intake with these pork and veg burgers

Ingredients

raw pork mince

400 g, extra lean

Breadcrumbs

35 g, white, made from one day old bread

carrot(s)

1 small, finely grated

zucchini

1 small

plum sauce

1 tbs

olive oil

2 tsp

Mountain bread, Wrap, Wholewheat

4 piece(s)

mixed salad leaves

50 g

Instructions

  1. Combine the mince, breadcrumbs, carrot, zucchini and plum sauce in a large bowl. Season with freshly ground black pepper. Mix until well combined. Shape the mixture into 16 patties.
  2. Heat the oil in a large non-stick frying pan over medium-high heat. Cook the patties, in batches, for 3-4 minutes each side or until golden and cooked through.
  3. Place 4 patties on each slice of bread. Top with salad leaves and wrap to serve.
