Wholemeal bread roll
320 g, (4x80g)
Anchovy fillets in oil, drained
4 medium, halved
Tuna, canned in vegetable oil, drained
Roasted capsicum, not in oil
Black olives, drained
8 individual, halved
- Cook the eggs in a small saucepan of boiling water for 6 minutes. Drain and cool in cold water. Shell and thickly slice.
- Top the bread bases with anchovy, egg, tuna, capsicum, olives, basil and remaining bread.
SERVING SUGGESTION: mixed green side salad drizzled with olive oil and balsamic vinegar.
