Pack these for a picnic! Pan bagnat means bathedbread. Assemble the rolls the night before and wrap them tightly in plastic wrap, so the bread canabsorb the yummy flavours.

wholemeal bread roll

320 g, (4x80g)

anchovy fillets in oil, drained

4 medium, halved

tuna, canned in vegetable oil, drained

185 g

roasted capsicum, not in oil

320 g

black olives, drained

8 individual, halved

fresh basil

Instructions

  1. Cook the eggs in a small saucepan of boiling water for 6 minutes. Drain and cool in cold water. Shell and thickly slice.
  2. Top the bread bases with anchovy, egg, tuna, capsicum, olives, basil and remaining bread.

Notes

SERVING SUGGESTION: mixed green side salad drizzled with olive oil and balsamic vinegar.
