This hearty soup is packed with delicious fresh vegies, pasta and ham. And it’s quick and easy too. Stove to plate in less than 30 mins!
Mixed vegetables, frozen, peas and corn
800 g, (2x400g packets)
4 cup(s), (1L)
97% fat-free deli sliced ham
100 g, chopped
120 g, macaroni
2 x 3 second spray(s)
- Lightly spray a large saucepan with oil and heat over medium-high heat. Cook the vegetables, stirring, for 8 minutes or until softened. Add the stock. Bring to the boil. Reduce heat and simmer for 5 minutes. Add the ham and pasta and cook for 12 minutes or until the pasta and vegetables are just tender.
- Season with salt and pepper and serve.
TIP: For a vego-friendly version, swap the ham for a 400g can rinsed and drained cannellini beans and serve sprinkled with ¼ cup (20g) shaved parmesan cheese. SERVING SUGGESTION: Chunky pesto dip.
