Dry wholemeal pasta
1 medium, thinly sliced
Hans 98% Fat Free Short Cut Bacon
125 g, diced
2 clove(s), crushed
Dried chilli flakes
Canned diced tomatoes
Baby capers, rinsed, drained
Baby spinach leaves
Grated parmesan cheese
- Cook pasta in a large saucepan of boiling salted water, following packet instructions, or until just tender. Drain. Return to pan.
- Meanwhile, heat oil in a large non-stick frying pan over medium heat. Add onion and cook, stirring, for 5 minutes or until softened. Add bacon and cook, stirring, for 3 minutes or until golden and crisp. Add garlic and chilli and cook for 1 minute.
- Add tomato paste, tomatoes, capers and ⅓ cup (80ml) water and bring to the boil. Reduce heat and simmer, uncovered, for 6–8 minutes or until slightly thickened. Season with freshly ground black pepper.
- Add tomato sauce and spinach to pasta and toss gently to combine. Serve sprinkled with parmesan.
