Ham and orange couscous salad

Fresh and fantastic, this salad is great for a quick lunch or a light dinner.


Ingredients
Dry couscous
1 cup(s), (200g)
97% fat-free deli sliced ham
150 g, torn into bite size pieces
Orange(s)
2 large, segmented, juice reserved
Mixed salad leaves
4 cup(s), (120g)
Dried cranberries
40 g, (2tbs)
Fresh dates
4 individual, finely chopped
Olive oil
1 tbs, (extra virgin)
Instructions

Boil 1 cup (250ml) of water in a kettle. Pour into a large heatproof bowl. Stir in the couscous and season with salt and pepper. Cover and set aside for 5 minutes or until the liquid is absorbed. Use a fork to separate the grains.

Toss the ham, orange, mixed leaves, cranberries and dates through the couscous. Pour over the oil and the reserved orange juice. Stir to combine. Season with salt and pepper.
