Whether you’re catering for a party or a few guests, these gourmet sandwiches promise to satisfy. Dill and parsley perfectly complement smoked salmon

Ingredients

extra light cream cheese

125 g, softened

lemon juice

1 tbs

fresh dill

1 tbs, finely chopped

fresh flat-leaf parsley

1 tbs, finely chopped

baby capers, rinsed, drained

2 tsp, finely chopped

red onion

¼ small, finely chopped

wholemeal bread

208 g, (Buy 8 x 30g slices)

baby spinach leaves

1 cup(s), (30g)

smoked salmon

100 g, slices

Instructions

  1. To make the salmon and fresh herb sandwiches, stir cream cheese and juice in a medium bowl until smooth. Add dill, parsley, capers and onion and stir until combined. Season with salt and freshly ground black pepper. Spread cream cheese mixture onto bread. Top 4 slices bread with spinach and salmon. Sandwich with remaining bread. Remove crusts and cut each sandwich into 3 fingers. Serve.
