Sweet crab meat mingles with peas, tomatoes, mint and a hint of chilli in this dinner-party worthy dish. Invite your friends around and lap up their praise!

Ingredients

Dry pasta

300 g, (linguine)

Lime juice

2 tbs

Olive oil

1 tbs

Garlic

2 clove(s), crushed

Fresh red chilli

2 whole, thinly sliced

Frozen green peas

1½ cup(s), thawed

Cherry tomatoes

250 g, halved

Crab

400 g

Fresh mint

¼ cup(s)

Instructions

  1. Cook pasta in a large saucepan of boiling salted water, following packet instructions, or until just tender. Drain. Return pasta to pan with juice and toss to combine.
  2. Meanwhile, heat oil in a medium non-stick frying pan over medium heat. Add garlic and chilli and cook, stirring, for 1 minute. Add peas and tomatoes and cook, stirring, for 1–2 minutes or until tomatoes are softened. Stir in crab.
  3. Add crab mixture and mint to pasta and toss to combine. Serve.

Notes

SERVING SUGGESTION: Mixed salad leaves.Fresh crab meat is available from your local fishmonger or in tubs in the refrigerator aisle of some supermarkets.
