Ingredients

olive oil

1 tsp

brown onion

½ medium, thinly sliced

red capsicum

1 medium, thinly sliced

garlic

1 clove(s), sliced

canned diced tomatoes

1 cup(s), (1x400g can)

zucchini

1 small, thinly sliced

high fibre wholemeal bread

2 slice(s), toasted

97% fat-free cottage cheese

cup(s), (80g)

fresh flat-leaf parsley

1 tbs, chopped

Instructions

  1. Heat oil in a medium saucepan over medium heat. Cook onion, capsicum and garlic, stirring, for 6 minutes or until softened. Add chopped tomatoes. Bring to the boil then simmer, with lid askew for 10 minutes.
  2. Add zucchini and cook for another 5 minutes. Season.
  3. Serve with toast spread with cottage cheese, sprinkled with pepper and parsley.
