This wholesome quickie is full of flavour but only uses a handfull of ingredients.

Ingredients

peanut oil

1 tbs

brown onion

1 medium, thinly sliced

fresh ginger

1 tbs, grated

broccolini

2 bunch(es), coarsely chopped

firm tofu

500 g, drained, cut into 2cm cubes

vegetable stock

cup(s), (80ml)

vegetarian stir-fry sauce

cup(s), (80ml)

white boiled rice

2 cup(s), (350g)

Instructions

  1. Heat oil in a large wok or frying pan over high heat. Stir-fry onion, ginger and broccolini stalks for 2 minutes or until the onion is softened.
  2. Add tofu, stock, stir-fry sauce and broccolini heads. Stir-fry for 2 minutes or until hot.
  3. Divide rice among serving bowls and top with the broccolini mixture. Serve.
