The kids will go crazy for this one! It can be eaten for brekkie, lunch or dinner!

Ingredients

shortcut bacon

80 g, chopped

wholemeal pita bread

180 g, (4 x 45g)

pizza sauce

cup(s), (80ml) tomato based

reduced-fat mozzarella cheese

cup(s), grated, (80g)

egg(s)

4 medium

fresh basil

¼ cup(s)

oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat oven to 180°C. Lightly spray a medium non-stick frying pan with oil and heat over high heat. Cook the bacon, stirring, for 2-3 minutes or until crisp.
  2. Arrange the pita breads onto 2 large baking trays. Spread with the sauce and top with the bacon. Sprinkle the cheese around the edge of the breads, leaving a 7cm-diameter circle in the centre.
  3. Carefully break an egg into the centre of each circle. Bake for 12-15 minutes or until the egg has just set and the bread is crisp. Sprinkle with the basil.

SERVING SUGGESTION: Salad of baby spinach and cherry tomatoes.
