Tomato, cheese and herb omelette

2 small, , lightly beaten

egg white

1 medium, (1 egg white)

Skim milk


grated parmesan cheese

1 tbs

white sourdough bread

2 slice(s), , toasted


Spray a non-stick frying pan with oil. Cook tomatoes and herbs and season with salt and pepper. Beat eggs and egg white with milk in a separate bowl. Season with salt and pepper. Pour mixture into a non-stick frying pan and sprinkle with cheese. Cook until set. Serve with warm toast.
