Notes

Chargrill sliced firm tofu, capsicum, sweet potato, zucchini and eggplant lightly sprayed with oil. Whisk teriyaki sauce, lime juice, a little sunflower oil, grated fresh ginger and chopped coriander. Drizzle over tofu mixture. Follow with low-fat natural yoghurt.
