Notes

Cook soba noodles following packet instructions. Pan-fry tuna steak and green shallots with a little olive oil. Slice tuna and combine with noodles, sliced snow peas, watercress, baby spinach and fresh coriander. Whisk soy sauce, lemon juice and wasabi paste. Drizzle over salad. Follow with a piece of fresh fruit.
