Notes

Spray a non-stick frying pan with oil and saute mushrooms until coloured. Remove from the pan. Beat whole eggs and egg white together. Add to the pan. When the eggs begin to set on the base, add the mushrooms, tomatoes and parsley. Season well and fold in half. Serve with the toast spread with ricotta.
