Notes

Bring orange juice and 1/4 cup water to boil in a saucepan over high heat. Add couscous and stir. Cover and remove from heat and set aside. Stir again. Add shallots, zucchini, coriander, and half of mint and season to taste with salt and pepper. Marinate lamb in Moroccan seasoning. Spray with oil. Heat a non-stick frying pan over high heat. Cook lamb for 2-3 minutes each side, or until cooked to your liking. Mix yoghurt with remaining mint. Serve lamb on couscous with yoghurt.
