Chicken, grape & feta cheese salad
30 g, and baby rocket leaves
black olives, drained
cooked skinless chicken breast
reduced fat feta cheese
Combine 30g baby spinach and rocket salad mix, ½ cup red seedless grapes, 6 pitted black olives (sliced) and 160g lean skinless grilled chicken breast (sliced). Combine 1 tbs balsamic vinegar and 1 tsp olive oil. Pour dressing over salad and top with 30g reduced-fat feta cheese (crumbled). Serve.
