Notes

Preheat oven to 220°C or 200°C fan-forced. Lightly spray ½ brown onion (thinly sliced) with oil and season with salt and pepper. Toss to coat. Bake on a baking tray lined with foil for 15 minutes. Drizzle with 1 tsp balsamic glaze and toss to coat. Bake for 5 minutes or until caramelised. Meanwhile, boil, steam or microwave 120g sweet potato (cut into 1.5cm-thick chips) until almost tender. Drain. Lightly spray potato with oil and season with salt and pepper. Toss to coat. Bake on another baking tray lined with foil for 15 minutes. Combine 1 tsp horseradish cream and 1 tbs no-fat Greek-style yoghurt in a bowl. Shape 80g lean beef mince into a patty. Pan-fry with 1 tsp olive oil until cooked through. Top ½ x 50g wholemeal bread roll (toasted) with mixed salad leaves, ½ small cucumber (cut into ribbons), beef patty, caramelised onion and horseradish yoghurt. Serve with fries and a garden salad.
