Notes

Preheat oven to 180°C. Wipe 1 large field mushroom with paper towel to clean. Use a sharp knife to discard stalk, making an indentation without cutting through mushroom cap. Lightly spray both sides with oil and season with salt and pepper. Heat a small, non-stick, ovenproof frying pan over medium heat. Pan-fry mushroom, top-side up, for 1-2 minutes, until lightly golden, then turn over. Break 1 egg into a small bowl. Carefully pour egg into mushroom indentation. Bake in same pan in oven for 2-3 minutes or until cooked to your liking. Sprinkle with 1 tsp finely chopped fresh chives and serve with 10g baby rocket leaves.
