When your oatmeal needs a makeover, try this tropical-inspired recipe. It's full of delicious goodness from fresh, juicy fruit, toasted coconut, and chia seeds. Chia seeds are loaded with protein and fibre and can absorb up to nine times their weight in liquid. They develop a thick, viscous texture when soaked, somewhat like that of tapioca. If you don't have pineapple or kiwi, consider blueberries and chopped strawberries instead.


Ingredients
Coconut water
1 cup(s)
Uncooked quick oats
½ cup(s)
Dried chia seeds
1 tbsp(s)
Kiwifruit
2 medium, peeled and finely chopped
Pineapple
¾ cup(s), finely chopped
Sweetened coconut flakes
2 tbsp(s), toasted
Instructions

In a small saucepan, bring the coconut water to a boil over high heat. Add the oats and chia seeds. Reduce heat and simmer until the oats are cooked through and thickened, about 5 minutes, stirring occasionally.

Divide the oats between 2 bowls. Top each bowl with the kiwis, pineapple, and coconut flakes.
