Talk about comfort: This recipe makes a delicious, not-too-sweet bread pudding loaded with fruit as a luxurious breakfast or mid-day snack. The spice in this pudding is a terrific way to liven up a regular, healthy morning meal. You can experiment with nutmeg, ground ginger, clove, and allspice, too. This recipe is also an amazing way to utilize fresh summer fruits. But, it's okay if those are not available: You can also use thawed, unsweetened frozen fruit instead. When you've finished baking it, top the pudding with 1 teaspoon powdered sugar just before serving!

Ingredients

Dried apricot halves

½ cup(s), diced

Orange juice

White bread

6 slice(s), 1/2-inch-thick sandwich bread (about 7 ounces total), crusts removed

Egg

3 large

2% reduced fat milk

2¾ cup(s)

Ground cinnamon

1¼ tsp(s)

Vanilla extract

1¼ tsp(s)

Turbinado sugar

1½ tbsp(s), or granulated sugar

Orange zest

1 tsp(s), finely grated

Nectarine

2 medium, or peaches, halved, stoned, and thinly sliced

Mixed berries

1½ cup(s)

Instructions

  1. Put apricots and orange juice in small bowl and let soak. Meanwhile, spray 4- to 6-cup gratin dish or baking dish with nonstick spray. Cut each bread slice into 4 triangles. Lay bread in dish, overlapping pieces to cover dish evenly.
  2. In medium bowl, whisk eggs until frothy. Whisk in milk, cinnamon, vanilla, sugar, and orange zest. Scatter apricots over bread in dish. Pour egg mixture over bread so each piece is coated. Let soak for 15–20 minutes.
  3. Meanwhile preheat oven to 350°F. Bake pudding until top is crisp and browned and egg mixture puffs and is set, 40–45 minutes. Remove and let pudding sit for 5 minutes, then top with one half of the nectarines and berries; serve remaining fruit on side. Best eaten warm and freshly baked!
  4. Serving size: 1 cup pudding and about 1/2 cup fruit
