Strawberry fruit salad
Fresh lime juice
2 tsp(s), grated, peeled fresh ginger
1½ pound(s), seedless
12 oz, (about 24 medium-size berries), hulled and halved
- In large serving bowl, mix lime juice, ginger, mint, and salt. Using melon baller, scoop 1-inch balls from watermelon, leaving white and green rind behind. (You can also cut watermelon into cubes.) Add watermelon and strawberries to bowl.
- Stack basil leaves. Roll stack tightly into cigar shape and thinly slice into ribbons. Toss basil into salad. Let stand for 30 minutes at room temperature, or cover and refrigerate for up to 4 hours.
- Serving size: about 1 cup
