Speedy Tomato and Basil Soup

Tomatoes and processed tomato products are excellent sources of lycopene, an antioxidant which helps keep our bodies healthy.


Ingredients
Vegetable bouillon cube
1 cube(s), dissolve in 300ml (1/2 pint) hot water
Onion
1 medium, thinly sliced
Garlic
1 clove(s), large, crushed
Canned salted tomato juice
4⅓ cup(s)
Garlic herb seasoning
1¼ tsp(s)
Asian hot sauce
⅛ tsp(s)
Fresh basil
4 tbsp(s), a few torn into pieces, extra to garnish
Worcestershire sauce
¾ tsp(s), (a few drops)
Tomato
1 large, finely chopped
Table salt
1 tsp(s), (a few drops)
Black pepper
1 pinch(es), freshly ground, season to taste
Plain lowfat yogurt
4 tbsp(s)
Vegetable bouillon cube

Instructions

Pour bouillon cube into large saucepan. Add red onion and garlic. Bring up to the boil. Reduce heat and simmer, covered, until onion is tender, about 5 minutes.

Add tomato juice and dried herbs. Bring up to the boil. Turn down the heat and simmer for 5 minutes.

Stir in torn basil leaves, Hot Sauce and Worcestershire sauce. Add chopped tomato, reserving some for garnish. Season soup, adding more Hot Sauce if you like.

Serve the soup, topping each portion with 1 tablespoon of yogurt, the reserved tomato and a few basil leaves.
