Roasted ranch butter beans

Canned large butter beans have a creamy texture but become wonderfully crisp after roasting in a hot oven. They’ll crack a bit and the skins will shrivel some, all part of the process of them transforming into a crisp snack.

15½ cup(s), rinsed and drained
Ranch seasoning

Preheat the oven to 400°F. Line a sheet pan with parchment paper or silicone mat.

Gently pat the beans dry with paper towels or a kitchen towel and place them on the prepared baking sheet. Coat the beans with cooking spray and sprinkle with the ranch seasoning; stir gently to coat. Roast until the beans are dry and crisp to the touch, 32 to 35 minutes, stirring gently after 25 minutes. Cool completely on the pan; store in an airtight container for up to 3 days.
