This elegant dessert is the perfect ending to a spring or summer meal. The best part: It only requires 7 ingredients, one of which is water. Tender poached apricots are covered with a sweet and silky vanilla-maple sauce. It's so delicious and easy to make that you can serve this with sorbet, nice cream, oatmeal, pancakes, and so much more. This recipe can be scaled up for a crowd. Getting in those fruit servings never tasted so good!

Ingredients

Water

1¼ cup(s)

Maple syrup

1 tbsp(s)

Sugar

1 tbsp(s)

Vanilla bean

1 item(s), halved

Fresh apricot

6 item(s), halved, pitted

Chopped pecans

4 tbsp(s), unsalted

Plain fat free Greek yogurt

½ cup(s)

Instructions

  1. Place water in a small pan (just large enough to cover the apricots in one layer) and add the syrup, sugar, and vanilla pod. Slowly bring to a boil, allowing the sugar to dissolve, then add the apricots and simmer for 4-5 minutes, or until the fruit is soft.
  2. Lift the fruit out and drain, turn the heat up, and simmer the liquid for another 12-15 minutes, or until it has reduced and is starting to form large bubbles. Stir in the pecans and cook for another 1-2 minutes until pecans are coated and syrupy.
  3. Serve the apricots with Greek yogurt and top with chopped pecans and syrup.
  4. Serving size: 3 apricots (6 halves)
