Banana

Canned unsweetened light coconut milk

Peach

1 medium, peeled and chopped in ½ inch cubes

Unpacked brown sugar

1 tsp(s)

Reduced-calorie margarine

1 tsp(s), melted

Instructions

  1. In a large bowl, mash banana with coconut milk. Stir in 1/3 cup of oats, vanilla, nutmeg, cinnamon, and salt; mix until well combined. Place the oat mixture in a glass jar and top with peaches. Refrigerate overnight.
  2. Preheat oven to 350F. In a small bowl combine remaining 1 Tbsp of oats, melted margarine, and brown sugar and spread on a parchment-lined baking sheet. Bake for 5-7 minutes, or until crisp, stirring half way through.
  3. Remove from oven and cool completely; store in an air-tight container at room temperature; to serve, top overnight oats with the crumble.
