No one can say no to a homemade oatmeal cookie. The ground cinnamon, ginger, and cloves bring out a unique, cozy depth of flavor that you and your loved ones will find irresistible. The center is soft and chewy, while the edges are perfectly crispy. Vary your batch of this homespun hero by adding 1/2 cup of raisins to the batter. With that classic addition, this will soon become your favorite at-home oatmeal-raisin cookie.

Ingredients

All-purpose flour

¾ cup(s)

Uncooked quick oats

1½ cup(s)

Baking soda

½ tsp(s)

Table salt

¼ tsp(s)

Ground cinnamon

1 tsp(s)

Ground cloves

¼ tsp(s)

Ground ginger

½ tsp(s)

Salted butter

½ oz, softened

Packed light brown sugar

¾ cup(s)

Sugar

¼ cup(s)

Egg whites

1 serving(s), large

Instructions

  1. Preheat oven to 350°F.
  2. Whisk together flour, oats, baking soda, salt, cinnamon, ginger and cloves in a medium bowl. Place butter in a large bowl or in the bowl of a mixer and beat butter for a few seconds. Gradually add sugars and beat to combine.
  3. Add egg white to butter mixture and beat to combine. Add dry ingredients and beat to combine.
  4. On ungreased cookie sheet, drop batter by the tablespoon, 2 inches apart. Bake until set and golden, 11 to 14 minutes. Remove to wire rack to cool. Makes 2 cookies per serving.

Notes

Adding 1/2 cup of raisins to the batter does not increase the Points value per serving (2 cookies per serving).
