Looking for a sweet—and lighter—alternative to apple pie or cobbler? Try this easy baked apple recipe that uses the microwave to get it to the table quickly; it’s ready in less than 15 minutes. As delicious as these apples are for breakfast, they make a comforting and naturally sweet snack or dessert, too. We’ve called for Gala apples here, but you could also use Honeycrisp, Fuji, or Pink Lady. All of them pair well with the warm spices, raisins, and creamy yogurt topping. If you like, sprinkle some ground nutmeg or ground ginger on the apples too before microwaving.

Ingredients

Apple

2 medium, Gala variety, halved and cored

Unsalted butter

2 tsp(s)

Raisins

2 tbsp(s)

Water

2 tsp(s)

Sugar

½ tsp(s)

Ground cinnamon

tsp(s)

Plain lowfat Greek yogurt

4 tbsp(s)

Instructions

  1. Place apples, cut sides up, in 9-inch pie plate. Dot apples with butter and sprinkle evenly with raisins, water, sugar, and cinnamon.
  2. Cover pie plate with wax paper and microwave on High until apples are very tender, about 5 minutes. Let stand, covered, 2 minutes.
  3. Divide yogurt evenly between 2 bowls. Top evenly with apples and drizzle with cooking juices.
  4. Serving size: 1 apple and 2 tablespoons yogurt
