This fun, family-friendly recipe is an easy way to smartly makeover store-bought items, turning them into a dessert ideal for weeknights or for a party. Best of all, you can easily customize it to fit a range of tastes by mixing and matching cookie types, ice cream flavours, and toppings. For example, pair chocolate sandwich cookies with cookies and cream ice cream and chocolate sprinkles or, for a key lime pie-inspired treat, try sugar cookies filled with lime sherbet and topped with crumbled graham crackers. This is also a good one for kids to get involved. Let them edge the filled sandwich cookies in the toppings and pass them out to family and friends.

Rainbow sprinkles

Store bought chocolate chip cookies higher fat

Instructions

Place sprinkles on a plate. Spread 2 tablespoons of ice cream onto a cookie; top with another cookie to make a sandwich. Quickly roll edges of ice cream sandwich in sprinkles; wrap in plastic wrap and freeze.

Repeat with remaining ingredients. (If ice cream gets too soft, put back in freezer for a little while before making remaining sandwiches.) Let sandwiches freeze for an hour before eating.
