Mug cakes are a fantastically easy and quick way to make a perfectly-portioned cake for one. Typical recipes are high in Points, but our version leans on powdered peanut butter, monk fruit sweetener, and Greek yogurt to keep them low.

Cooking spray

Powdered peanut butter

Monk fruit sweetener with erythritol

Unsweetened dark cocoa powder

Instructions

In a medium bowl, whisk together the yogurt and egg until smooth. Stir in the powdered peanut butter, monk fruit sweetener, cocoa powder, and baking powder until well combined.

Coat a 10- to 12-oz microwave-safe mug with cooking spray and spoon the batter into the mug. Microwave on High until the cake rises to the top and is cooked through, 1 to 1½ minutes. Serve immediately.
