Grilled watermelon and goat cheese salad

Reduced-fat goat cheese
½ cup(s), crumbled
Store-bought balsamic glaze
Green pumpkin seeds (pepitas)
- Off heat, coat grill rack or grill pan with nonstick spray. Preheat gas grill or grill pan to high, or prepare high fire in charcoal grill. Grill watermelon slices until lightly charred, 10 to 20 seconds per side.
- In medium bowl, toss arugula and oil and season with salt and black pepper. Arrange 1 watermelon slice each on 4 small plates. Sprinkle each with 2 tbsp cheese. Top each with another watermelon slice, then top with arugula. Dividing equally, drizzle with balsamic glaze and sprinkle with pumpkin seeds.
