OK, we may be pushing the limits of salsa here and edging on salad territory. But that’s the whole fun. This chunky mix unites chopped tomatoes, fresh corn, and earthy black beans with the bold flavours of lime, cilantro, and hot sauce. Try the salsa scooped up with baby bell peppers, added to a quesadilla filling, or spooned over grilled chicken.

Ingredients

Grape tomatoes

8 medium, finely chopped

Corn

½ cup(s), fresh

Canned black beans

¼ cup(s), rinsed and drained

Uncooked scallion(s)

1 small, thinly sliced

Cilantro

2 tbsp(s), chopped

Lime zest

¼ tsp(s), grated

Fresh lime juice

Instructions
