This salsa gets a protein boost from the addition of black beans. Scoop it up with baby bell pepper halves, celery sticks, or tortilla chips. You can also use this salsa as a taco topping or quesadilla filling - just add cooked shrimp, steak or chicken, and a little cheese. It's also great served over grilled chicken or fish, or as a quick, no-cook side dish to Mexican meals. Just multiply the recipe to yield more servings. If you can't get good, fresh sweet corn, swap defrosted frozen corn in its place.
