Ingredients

Canned drained chickpeas

½ can(s)

Peanut butter

2 tbsp(s)

Vanilla extract

1 tsp(s)

Fresh dates

3 item(s), pitted, finely chopped

Egg

1 medium

Canola oil

1 tsp(s)

Chopped walnuts

2½ tbsp(s), finely

70-85% dark chocolate

1 oz, finely chopped

Instructions

  1. Preheat oven to 350°F. Line a baking tray with baking paper.
  2. Using electric beaters, beat chickpeas, peanut butter, vanilla, dates, egg, oil and a pinch of salt until a thick batter forms. Stir in half the walnuts and chocolate.
  3. Drop tablespoons of batter, 3cm apart, onto prepared tray. Top with remaining walnuts and chocolate, pressing down lightly into batter. Bake for 15-20 minutes or until golden. Cool completely on tray.
