Thanks to the air fryer, these onion rings stay crunchy outside and tender inside. Our ranch-style dip is made with kefir, a fermented milk drink that has plenty of protein plus active probiotics. Make a double batch of the dip and use to drizzle over your favorite salad.

½ cup(s), or low-fat buttermilk

Light mayonnaise

6 tbsp(s)

Garlic clove(s)

1 clove(s), medium, minced

3 tbsp(s), chopped fresh

Fresh parsley

2 tbsp(s), chopped, flat leaf

Rice vinegar

½ tsp(s)

Table salt

¼ tsp(s)

Black pepper

All-purpose flour

½ cup(s)

½ cup(s), or low-fat buttermilk

Raw egg(s)

1 large

Cayenne pepper

¼ tsp(s)

Table salt

½ tsp(s)

Granulated garlic

¼ tsp(s)

Panko breadcrumbs

1¼ cup(s)

Uncooked onion(s)

3 medium, (about 1 pound) cut into 1/2-inch slices and separated into rings (save smaller rings for another use)

  1. To make kefir dip, whisk together all dip ingredients in small bowl until blended. Let stand to allow flavors to blend.
  2. To make onion rings, spread 1/4 cup flour on sheet of wax paper. Whisk together kefir, egg, remaining 1/4 cup flour, cayenne, salt, and granulated garlic in medium bowl until smooth. Spread panko on separate sheet of wax paper.
  3. Coat onion rings, 5 at a time, with flour. Dip coated rings into batter, letting excess batter drip off, then coat with panko. Arrange on baking sheet in single layer. Repeat to coat remaining onion rings.
  4. Preheat air fryer to 360°F for 3 minutes. Lightly spray basket with nonstick spray. Place single layer of onions rings in basket. Spray rings with nonstick spray and air-fry 5 minutes. Turn rings over and spray with nonstick spray. Air-fry until crispy, 4 minutes longer. Repeat with remaining onion rings. Serve with dip.
  5. Serving size: about 6 onion rings and 2 tablespoons dip.

Shopping tip: Almost any type of onion is good for onion rings, including white, yellow, and sweet onions like Vidalia, Maui, Walla Walla, or Texas Sweet. Choose onions that are very hard and firm, with no soft spots.
