Canned pinto beans

16 oz, drained and rinsed (1 can)

Hot pepper sauce


Mineral water

2 tbsp(s)

Fresh tomato(es)

1 medium, chopped

Green pepper(s)

½ medium, seeded and chopped

Fat free sour cream

Fat free salsa

Low-fat shredded cheddar cheese

  1. In blender puree beans, pepper sauce and 2 tablespoons water. Transfer to a 12-inch serving plate. Spread in a thin layer on the platter, leaving a 1-inch border.
  2. Top the bean mixture evenly with chopped tomato and green pepper. Leave a 1-inch border.
  3. Top the pepper layer with sour cream, salsa and cheese. Sprinkle with olives. Garnish with scallions, if desired.
