Fudge pops are a welcome treat on a hot summer day. It takes just a few minutes to make these satisfying pops, but do be sure to give them time to freeze. Ice pop molds are fun to keep on hand, but if you don’t have a set, or not enough for the 12 pops in this recipe, use small paper cups instead. When the pops have been freezer for about an hour or two and beginning to freeze, insert craft sticks into the center and let them finish freezing. When the pops are ready, just peel off the paper and enjoy.

Ingredients

Chocolate unsweetened almond milk

1½ cup(s)

Semisweet chocolate chips

¾ cup(s)

Plain fat free Greek yogurt

1½ cup(s)

Vanilla extract

2 tsp(s), pure variety

Instructions

  1. In small saucepan, bring almond milk to simmer over medium- low heat. Add chocolate chips and increase heat to medium. Simmer, stirring constantly, until chocolate melts. Remove from heat and let cool for 5 minutes.
  2. Add yogurt and vanilla and whisk until smooth. Set fine-mesh sieve over large bowl. Strain mixture through sieve and into bowl. Divide mixture among 12 ice pop molds. If molds do not have tops with sticks, freeze pops for 1 hour, then insert wooden ice-pop sticks into pops. Freeze until pops are frozen, about 6 hours total.
