Chocolate sauce isn't just for ice cream, and this sweet and spicy sauce is here to prove it. It's an easy sauce to put together, too. Just melt chocolate, season it with chipotle, cumin, and a dash of Worcestershire, then sweeten with sugar and applesauce and you’ve got a sauce with a lot of personality. Store any leftover chipotles in the freezer. Try the sauce drizzled over grilled shrimp or scallops. You can make this sauce ahead of time and keep refrigerated up to a week.

Unsweetened baking chocolate squares

1 oz

Packed brown sugar

1 tbsp(s), dark variety

Unsweetened applesauce

¼ cup(s)

Worcestershire sauce

4 tsp(s)

Canned chipotle peppers in adobo sauce

1 tbsp(s), chopped

Kosher salt

¾ tsp(s)

Cayenne pepper

¼ tsp(s)

Ground cumin

¼ tsp(s)

Black pepper

¼ tsp(s)

  1. In small saucepan, warm chocolate over medium heat, stirring, until melted and smooth, about 1 minute. Add brown sugar and stir until dissolved, about 1 minute. Stir in 3/4 cup plus 2 tbsp water, applesauce, Worcestershire, chipotle peppers, salt, cayenne pepper, cumin, and black pepper. Use immediately, or let cool, cover, and refrigerate for up to 7 days.
