Bananas in Orange and Rum Sauce

Ingredients

Orange zest

2 tsp(s)

Vanilla extract

½ tsp(s)

Plain lowfat yogurt

6 tbsp(s)

Golden seedless raisins

15 gm

Packed brown sugar

2 tbsp(s)

Rum

½ fl oz, (light or dark)

Banana

4 medium, (not too ripe)

Instructions

  1. Stir 1 teaspoon of orange zest and the vanilla essence through the yogurt. Chill until ready to serve.
  2. Put the remaining orange zest into a frying pan with the golden raisins, sugar and rum. Heat and simmer gently until the liquid has reduced by half.
  3. Slice the bananas into the frying pan and cook gently for about 2 minutes, turning the slices to coat in the orange sauce. Serve at once with the orange flavoured yogurt.
  4. For a sharper flavour, add a tablespoon of lemon juice to the sauce just before serving.
