These pancakes are super tasty on their own, but they're also amazingly versatile. You only need three ingredients to make them, one of which is cooking spray. Yes, it's really that easy. To mix things up a bit, you can add a pinch of cinnamon and nutmeg, and a dash of vanilla extract to the batter. Or stir in a few spoonfuls of canned puréed pumpkin or some orange zest. Experiment to find your favourite flavour combinations that'll satisfy you every morning. Serve as is or top with fresh fruit.

- Mash banana in a medium bowl. Whisk eggs in a separate bowl; add to banana and stir well to combine.
- Coat a large nonstick skillet with cooking spray; set over medium heat. Spoon 3 Tbsp batter for each pancake into skillet (you'll have to do this in several batches). Cook over medium heat until edges are set and bottoms are golden, about 30 seconds-1 minute. Carefully flip pancakes with a thin spatula and cook on other side until bottoms are golden, about 30 seconds-1 minute more.
