Get ready to meet your new favourite fall coffee drink. After all, pumpkin spice shouldn’t have all the fun! Apple cider is reduced down to a syrup, then combined with warm almond milk, espresso powder, a hint of sugar, and apple pie spice for a sipper that captures the flavours of fall. Sweet-tart, juicy, concentrated apple flavour really shines through and balances the bitter bite of espresso. If you can’t find apple pie spice, you can use a scant ¼ teaspoon of cinnamon with a pinch each of nutmeg and allspice.

Apple cider

Plain unsweetened almond milk

1½ cup(s)

Instant espresso powder

Sugar

Apple pie spice

Instructions

  1. In a small saucepan, bring the cider to a boil over medium-high heat. Cook until reduced to about 2 tbsp, 4 to 5 minutes.
  2. Reduce the heat to medium, and stir in the almond milk, espresso, and sugar; cook until hot but not boiling, about 3 minutes. Pour the mixture into a blender and add the apple pie spice. Blend until very frothy, 30 seconds to 1 minute. Divide evenly between 2 coffee mugs.
  3. Serving size: a scant 1 cup
