If you enjoy snacking on apple slices and peanut butter, you’ll love these bars. A combo of grated sweet-tart Honeycrisp apple and unsweetened applesauce doubles the fruity flavor while also keeping these treats moist and flavorful. Powdered peanut butter is the secret to the lightly sweetened drizzle on top. You can find it near the regular peanut butter at the supermarket.

Instructions

  1. Preheat oven to 350°F and coat an 8 by 8-inch baking pan with cooking spray.
  2. In a small bowl, whisk together flour, cinnamon, baking powder, and salt. In a medium bowl, beat together butter and brown sugar until combined and fluffy, 2 to 3 minutes. Beat in egg, applesauce, and vanilla extract until combined. Gently fold in flour mixture until just combined. Fold in grated apple.
  3. Spread batter evenly in prepared pan and bake until a toothpick inserted in the center comes out clean, 20 to 23 minutes. Cool completely in the pan set on a wire rack for 30 minutes before glazing.
  4. To make glaze, in a small bowl, whisk together powdered peanut butter and confectioner’s sugar. Add ¼ cup water and stir to combine (the mixture should look like creamy peanut butter). Add 1 tsp water, stirring well until the mixture is thick but spreadable (add additional drops of water to reach desired thickness). Transfer peanut butter glaze to a small sandwich baggie and chill well in the refrigerator for 30 minutes.
  5. When bars are cooled and glaze is chilled, snip a small hole in the corner of the baggie and evenly drizzle glaze across the top of the bars. Store in an airtight container at room temperature for a day or in the refrigerator for up to 5 days.
  6. Per serving: 1 bar
