Notes

Coat a nonstick skillet with cooking spray. Add shallot and zucchini and sauté over medium-high heat until zucchini is golden, about 5 minutes; remove from skillet and set aside. Off heat, recoat skillet with cooking spray. Beat together egg substitute and oregano in a small bowl; pour into skillet. Cook egg mixture over medium heat until edges begin to set, about 1 minute. Gently spoon vegetables over egg mixture and sprinkle with cheese; cook until frittata is set and no longer wet looking, about 1 to 3 minutes. (COOKING TIP: Broil this dish in an oven-proof skillet for 30 seconds just before serving to give the topping a golden brown finish.)
