Preheating oil is the secret to achieving the puffed golden batter for this traditional British dish.

Ingredients

Egg(s)

2 medium

Reduced-fat milk

cup(s)

Plain flour

cup(s)

Fresh thyme

1 tsp

Whole grain mustard

3 tsp

Extra lean beef sausage

360 g, (12 chipolatas)

Sunflower oil

1 tbs

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat oven to 220°C or 200°C fan-forced. Using electric beaters, beat eggs, milk, flour, thyme and mustard in a large bowl for 1–2 minutes until smooth. Set batter aside for 10 minutes.
  2. Meanwhile, lightly spray a medium non-stick frying pan with oil and heat over medium-high heat. Cook sausages, turning, for 4–5 minutes or until just cooked through.
  3. Pour oil into a 9cm x 19cm (base measurement) loaf tin and place in oven for 5 minutes. Arrange sausages in tin and pour over batter. Bake for 20 minutes or until golden and cooked through. Serve sprinkled with extra thyme.

SERVING SUGGESTION: Steamed broccoli, cauliflower and carrots.
