Sweet honey with tangy lemon transforms baby carrots into a tasty side.

Ingredients

Baby carrot

40 individual, (2 bunches), rainbow variety, trimmed and peeled

Honey

2 tsp

Lemon juice

1 tbs

Fresh chives

2 tbs, chopped

Instructions

  1. Preheat oven to 200°C or 180°C fan-forced. Line a large baking tray with baking paper. Spread 2 bunches baby carrots over prepared tray and bake for 30-40 minutes until golden or steam until tender. Season with salt and pepper. Drizzle with honey and a squeeze of lemon juice. Sprinkle with chopped fresh chives to serve.
