If you’re a carbonara fan, you’ll want to try this veg-packed version of the comforting classic. Fresher, lighter, and on the table in just 15 minutes, it’s a great one to add to your weeknight dinner rotation.

Ingredients

Leg ham

125 g, diced

Zoodles

500 g, (packet zucchini noodles), (see tip)

Garlic

1 clove(s), crushed

Sage, dried

¼ tsp

Light cream cheese

125 g

Grated parmesan cheese

2 tbs

Oil spray

1 x 3 second spray(s)

Instructions

  1. Lightly spray a large non-stick frying pan with oil and heat over medium-high heat. Cook ham, stirring, for about 3 minutes or until crisp and lightly browned.
  2. Add zucchini noodles, garlic and sage and cook, stirring, for 2-3 minutes, until zucchini is just tender. Add cream cheese and parmesan. Cook, stirring, for a further 2 minutes or until cheese melts and coats zucchini. Season with salt and pepper. Serve.

Notes

INGREDIENT TIP: Zucchini noodles are available in the fresh produce section at major supermarkets. If you’d prefer to make your own, you’ll need to spiralise 3 large zucchini. You can find the WW 3 blade spiraliser at ww.com/shop
