These little bites of joy aren’t just for the vegans to enjoy. Sweetened with apples and a serving of strawberry jam, they’re perfect to enjoy with a cup of tea or coffee, plus they also contain a decent amount of fibre to help keep you feeling satisfied.

Ingredients

Reduced fat oil spread

50 g

Unsweetened oat milk

100 ml

Red apple, unpeeled

2 medium, grated

Pumpkin seeds (pepitas)

2 tbs, chopped

Reduced-sugar jam

1½ tbs, strawberry flavoured

Plain flour

190 g

Baking powder

1 tsp

Instructions

  1. Preheat oven to 160° C. Line a large baking tray with baking paper.
  2. Mix flour, baking powder, oil spread, oat milk and apple in a large bowl until well combined. Stir in pepitas.
  3. Spoon 10 equal portions of mixture onto prepared tray. Bake for 25-30 minutes, until light golden. Serve with strawberry jam.
